Cola Braised Jackfruit

Cola Braised Jackfruit
2 20 oz cans jackfruit, drained and rinsed, and kinda broken apart with your hands
3 tablespoon flavorless oil, like grapeseed or sunflower
1 large onion, chopped
4 cloves of garlic, minced
3 cups cane sugar based cola
2 cups veggie broth
2 tablespoon Braggs Liquid Aminos
2 teaspoon smoked paprika
1 tablespoon liquid smoke
1 teaspoon onion granules or onion powder

Heat 1 tablespoon of the oil in a large stock pot over a medium heat. Add the onion and saute until it starts to soften up, about 2 minutes.  

Add jackfruit and garlic to the pot and stir it all around and break up the jackfruit more with whatever you're stirring with. Add 2 cups of the cola and all the veggie broth and let that fucker simmer, uncovered, over a low heat for about 30 minutes. You can cook it right away after this or let it sit for a couple hours too. Up to you and your busy ass life.

Once you’re ready to go, drain the jackfruit mixture and add it to a large skillet or wok with the remaining 2 tablespoons of oil over a medium high heat. The jackfruit is still gonna have tons of liquid in it so you wanna keep stirring that motherfucker to help lots of it evaporate, about 5 minutes. Drizzle over the Braggs Liquid Aminos, smoked paprika, liquid smoke, and onion granules over the pot. Stir then pour in the last cup of cola and keep cooking until that shit doesn't look wet anymore and there's hardly any liquid in the bottom of the pan. Taste, add more of whatever you like, then turn off the heat.

Serve it on a hamburger bun with mayo and your fav bbq sauce smeared on the bun, dill pickles and our Celery Seed Cole Slaw.
